Dear Oprah...


I just finished watching the Oprah finale (and the surprise episodes yesterday). Wow.

I wasn't an Oprah kid. My mom didnt really watch the show so I wasn't grandfathered into her audience. My childhood memories of Oprah were after school rainy afternoons, or if I was doing my home-schoolwork in front of the tv during the ABC afternoon lineup (All My Children, One Life to Live, General Hospital, and Oprah at 4). I wasn't a diehard fan, but I do always remember having a warm, cozy feeling around hearing her voice or seeing her face.

Today's goodbye show made me wish I'd been watching for 25 years.
Oprah,
You are the epitome of Class and Guts. Thank you for setting an example of beauty, grace, sass, strength and courage to women and men all over the world. You are a living example of God's joy. What else are we doing here on earth, if not to live in the fullness of who we really are? How else can we recognize and experience the truth of our identities if not for people who come into our lives and lead the way? We are all destined for greatness of some capacity and you have been a light and leader for so many to live in that freedom and joy. You have not claimed to be the Light, only to know the Light and have pointed us to it.

Thank you for 25 years of service. Thank you for teaching others to dream. Thank you for believing in the truth of who you are-- a task for which you must come into much spiritual opposition, but you have soldiered on and been a trailblazer for millions. Thank you for your perseverance, faith and determination. We love you, Oprah!

Recipe

Trying to lose the leftover baby weight is can be extra difficult for breastfeeding women. For some gals, the weight comes right off, for others, our bodies hold on tight to the excess fat as protection for our milk supply. But if you're feeding your body the right nourishment and vitamins you can let your body know it's okay to let go and you can work off that baby fat!

So, in addition to the Tread on Trafficking, I've been getting careful about what I eat and here's one of my recipes for a delicious, healthy breakfast-- the best way to start off your day! Incidentally, this recipe was introduced to me by my good friend (and super healthy gal-- I mean, did you SEE her in that bikini in the OTH Puerto Rico episode!?) Sophia Bush.


EASY VEGAN SWEET POTATO BURRITO

1 tsp OLIVE OIL, PEANUT OIL or EV COCONUT OIL
2 handfuls of SPINACH
1 cup frozen SWEET POTATOES
1/2 cup BLACK BEANS
1/2-1 cup ONIONS (amount to taste)
1 LOW CARB TORTILLA
1 tbsp stone ground DIJON MUSTARD

In a covered skillet, cook onions and sweet potatoes with oil until onions are translucent. Add spinach and black beans. Cover until spinach is wilted.

When veggies are cooked, add to tortilla with Dijon mustard and enjoy!
